SabbiaGialla – White Wine

Production area: San Biagio Vecchio and Podere Terbato Faenza (RA)
Grape variety: Native white grape from Romagna
Soil exposure: southeast
Elevation: 190m a.s.l.
Soil type: medium mixture
Vineyard planting year: since 1990 using the massal selection method, with subsequent replanting also carried out using massal selections.
Vine training system: guyot
Grape harvest: by hand in boxes, with careful selection of the grape clusters. We make repeated passes to accommodate the slow and gradual ripening of the bunches in all vineyards. In this harvest we conducted 4 separate harvesting sessions. The last of these was attacked by Noble Rot and it comes from a vineyard in Albana located in the valley floor below Torre di Oriolo, on the Terbato Estate, which has a northern exposure.
Vinification: maceration of the must with its skins for 1 day
Maturation: in steel tanks for 6 months
Organoleptic characteristics: deep straw yellow in color; on the palate, it offers full-bodied notes of yellow-fleshed fruit, broom, acacia and elderberry. Tanginess, warmth and juicy acidity come together in perfect balance
Storage: cool, dry room, preferably in the dark, and with bottles lying down
Serving temperature: 12/13°C

Food pairing: tortellini in brodo, passatelli in brodo, roast white meat
